Caramel topping:
 
• 150 g dark Muscovado sugar
• 75 g butter
 
Cake batter :
 
• 250 g flour
• 2 tsp baking powder
• 225 g powdered sugar
• 125 g butter
• 2 eggs
• 80 ml milk
• couple of bananas, sliced 0.5 cm thick
• pinch of salt
• pinch of ground cinnamon
 

Directions:
 
Preheat oven to 180°C and prepare baking dish 26 cm.

For caramel topping- melt muscovado sugar and butter in a pan, on low heat. Pour caramel into baking dish. Place banana slices evenly over caramel.

For batter - melt butter and leave to cool slightly. Combine flour, baking powder, salt, sugar and cinnamon. Mix eggs and milk in another bowl. Pour over dry ingredients, add melted butter and mix everything until just combined. Pour cake batter over bananas in pan.

Bake for 35-40 minutes or until toothpick in the center comes out clean. Remove from oven and let sit for 5 minutes. Turn cake out onto plate. Serve warm.
