I always seem to have overripe bananas in my fruit bowl because I only like to eat slightly green bananas. And I don’t mind because it is perfect excuse to bake Banana bread 🙂

I love that Banana bread is so easy to make. It has very few simple ingredients that you will mostly have at home. It’s also an excellent base for adding nuts, chocolate chips, dried fruits, or anything else you like to eat in banana bread. Perfect for breakfast or an afternoon snack!

Banana bread

25×12 cm loaf tin

Ingridients:

• 115 g butter
• 165 g demerara sugar
• 2 eggs
• 60 ml milk
• 3 bananas
• 300 g flour
• 1 tsp baking powder
• ¼ tsp bicarbonate of soda
• ¼ tsp salt
• 1 tsp cinnamon
• ½ tsp ground cloves
• 70 g walnuts, roughly chopped

Directions:

Place a rack in the bottom third of the oven, preheat the oven to 180°C. Butter loaf tin or line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang.

Sift the flour, baking powder, bicarbonate of soda, spices and salt into a large mixing bowl. Melt butter in a saucepan over medium heat, set aside to cool. In a separate bowl whisk together eggs, milk and sugar. Whisk in the mashed bananas and melted butter. Add the wet ingredients, all at once to the dry ingredients. Add walnuts, and mix in. Pour the mixture into the prepared loaf tin.

Bake for about an hour, or until a skewer inserted into the center of the loaf comes out clean. Remove from the oven and cool in the tin for a few minutes, then turn out onto a wire rack to cool completely before serving.
