Strawberry & Champagne Popsicles

Ingridients:

• 60 g sugar
• 60 ml water
• 500 g strawberries
• 250 ml champagne

Directions:

Put sugar and water in a small saucepan and bring to boil over high heat, stirring until sugar is dissolved. Set aside and let cool.

Slice the strawberries in half, put them in a blender and purée until smooth. Add syrup and champagne and slightly stir until incorporated. Pour into popsicle molds, add popsicle sticks and freeze for 6-8 hours, or overnight. To release popsicles, run mold under warm running water and they will easily slide out after a few seconds.

Espresso brownies

for baking dish 22×22 cm
 
Ingridients:
 
• 3 eggs
• 200 g light muscovado sugar
• 160 g flour
• pinch of salt
• 200 g dark chocolate
• 115 g butter
• 30 g cocoa
• 1¾ TBS espresso coffee (powder)

 
Directions:
 
Preheat oven to 350˚F/180°C. Line an 22×22 cm baking dish with baking paper.

In saucepan, on low heat, melt butter and chocolate. Remove from heat and add cocoa and espresso coffee. Mix well, set aside to cool slightly.

Beat eggs with sugar and pinch of salt. Add melted chocolate and mix to combine. Sift the flour over and stir until well combined. Pour the batter into prepared pan and bake for about 20 minutes. Check for doneness with the toothpick method: a toothpick inserted into the center of the brownies should come out with a few chocolaty crumbs on it, but not batter-like. When it’s done, remove to a rack to cool. Leave in the dish until completely cold. Cut in cubes just before serving.

Caramel topping:
 
• 150 g dark Muscovado sugar
• 75 g butter
 
Cake batter :
 
• 250 g flour
• 2 tsp baking powder
• 225 g powdered sugar
• 125 g butter
• 2 eggs
• 80 ml milk
• couple of bananas, sliced 0.5 cm thick
• pinch of salt
• pinch of ground cinnamon
 

Directions:
 
Preheat oven to 180°C and prepare baking dish 26 cm.

For caramel topping- melt muscovado sugar and butter in a pan, on low heat. Pour caramel into baking dish. Place banana slices evenly over caramel.

For batter – melt butter and leave to cool slightly. Combine flour, baking powder, salt, sugar and cinnamon. Mix eggs and milk in another bowl. Pour over dry ingredients, add melted butter and mix everything until just combined. Pour cake batter over bananas in pan.

Bake for 35-40 minutes or until toothpick in the center comes out clean. Remove from oven and let sit for 5 minutes. Turn cake out onto plate. Serve warm.

Grilled Prawns & Avocado Pico de Gallo

Grilled Shrimp & Avocado Pico de Gallo

for 2 person
 
Grilled prawns

• 250 g prawns, peeled leaving tails intact
• 1 orange, juice only
• ½ chilli pepper, finely chopped
• 2 tbs olive oil
• salt

For marinade – mix orange juice, olive oil, chilli pepper and salt in a bowl. Pour marinade into a resealable plastic bag with shrimp. Marinate in the refrigerator for few hours.

Thread shrimp on soaked wooden skewers so it looks like the letter C. Preheat the grill plate on high. Grill the prawns for 2-3 minutes each side or until the prawns curl and change colour.

 
Avocado pico de gallo

• 3 tomatoes, finely chopped
• 1 red onion, finely chopped
• 1 avocado, finely chopped
• juice of half lime
• 2 tbs olive oil
• 2 tbs chopped fresh coriander
• salt, to taste

Combine vegetables in a bowl. For dressing – mix lime juice, olive oil, coriander and salt. Pour over vegetable and mix. Serve with grilled shrimps.

Strawberry crumble

for baking dish 30×20 cm

Ingredients:

• 1-1½ kg fresh strawberries, hulled
• 3 tbs demerera sugar, for strawberries
• 1 tbs cornstarch
• 150 g oats
• 100 g flour
• pinch of salt
• 100 g cold butter, diced
• 100 g demerera sugar
• 1 tbs honey

Directions:

Preheat the oven to 180°C.

Put the strawberries into your dish and sprinkle over them the sugar and cornflour. Mix well.
In a food processor, combine the flour, oats, demerera sugar and salt. Pulse until mixed. Add the butter. Pulse until the butter is the size of peas.
Add honey and mix. Sprinkle the mixture over the strawberries, covering the strawberries in an even layer. Drizzle a bit of honey over the crumbs.

Bake in the oven for 35-40 minutes or until the filling is bubbling and the top is golden. Leave to stand for 10 minutes before serving with vanilla ice cream.

Usually, they are made with pork fat, but you can substitute it with butter. Be sure you leave them for a day or two in a cookie jar or a tin box so they can develop the taste and soften. I promise, they will melt in your mouth!

I always seem to have overripe bananas in my fruit bowl because I only like to eat slightly green bananas. And I don’t mind because it is perfect excuse to bake Banana bread 🙂

I love that Banana bread is so easy to make. It has very few simple ingredients that you will mostly have at home. It’s also an excellent base for adding nuts, chocolate chips, dried fruits, or anything else you like to eat in banana bread. Perfect for breakfast or an afternoon snack!
